Preparation for this side dish is quite easy. Trim off the ends of your asparagus first. I like to roast the asparagus whole, but you can also chop it into quarters to make for an easier bite. On a baking sheet lined with aluminum foil, toss the asparagus with olive oil, lemon juice, salt and pepper, and crushed red pepper flakes. Arrange in one layer and ensure there is no overlap between stalks. Top with parmesan cheese. Then bake at 400° F for 20 minutes until asparagus crisps. I like to pair this with grilled chicken or risotto, but this side is so versatile, you can make it part of your favorite meal!

Lemon Parmesan Roasted Asparagus

Ingredients:
- 1 bunch asparagus (~20 stalks), ends trimmed off
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- ½ tsp crushed red pepper flakes
- ¼ cup grated Parmesan cheese
Directions:
- Preheat oven to 400° F. Line a large baking sheet with aluminum foil. Add the asparagus to baking sheet, then toss with olive oil, lemon juice, garlic powder, salt, pepper, and crushed red pepper flakes.
- Arrange the asparagus in a single layer, ensuring there is no overlap between stalks. Generously sprinkle the parmesan cheese over the asparagus.
- Bake for 20 minutes or until asparagus has achieved the desired amount of crisp. Serve as a side to your favorite meal and enjoy!
