Dense Bean Salad

The base of this dish is made with two different kinds of beans, corn, and spinach. Tossed with lemon vinaigrette and topped with fresh mozzarella cheese and sweet roasted red peppers, this is the perfect salad. Make this salad as a side, or add a protein to make it a main dish. Either way, this salad has the makings to be the star of the show.

What you need:

  • Beans. I like to use great white northern beans and pinto beans, but feel free to use what you prefer!
  • Sweet corn. I use canned corn for ease, but you can also use fresh corn from the cob if you have it!
  • Roasted red peppers. Canned whole or sliced roasted red peppers work.
  • Mozzarella cheese. I like to cube fresh mozzarella cheese, but you could also use mozzarella pearls.
  • Spinach. This adds some greens to the salad so you could also use arugula or kale.
  • Red wine vinegar and extra virgin olive oil are the base for the dressing. Then add in lemon juice, oregano, salt, and pepper.

I love a good salad that leaves you feeling satisfied, but doesn’t leave your stomach feeling too heavy and this salad does just that. The flavors come together in a magical way delivering goodness in every bite.

This salad is also incredibly easy to make and comes together in no time. Simply add all the ingredients to a large salad or mixing bowl then toss with the dressing. Simple as that!

Dense Bean Salad

Serves: 4

Ingredients:

  • 15.5 oz can great white northern beans
  • 15.5 oz can pinto beans
  • 15.25 oz can sweet corn
  • 12 oz jar roasted red peppers
  • 6 oz mozzarella cheese, cubed
  • 4 cups spinach
  • ½ cup red wine vinegar 
  • ½ cup olive oil
  • 2 tbsp lemon juice
  • 2 tsp oregano
  • ½ tsp salt
  • ½ tsp pepper

Directions:

  1. Add the two types of beans, sweet corn, roasted red papers, mozzarella cheese, and spinach to a large salad or mixing bowl. Toss to combine. 
  2. In a glass container, whisk together red wine vinegar, olive oil, lemon juice, oregano, salt, and pepper. 
  3. Add the dressing to the salad bowl and toss to coat. Serve as a side salad or make it a main dish by adding a protein such as grilled steak or shredded barbecue chicken! Enjoy!
